Meet Aelita Andre. I want to step into this child's mind for just a moment to see the world the way she does. This will be a video I use in my classroom next year when exploring abstract art. Now if I could just cover the floor and walls of my classroom with plastic, we could all throw paint everywhere! Hmm...... (devious smile...)

This past week I watched the documentary, "Forks Over Knives," and it was the final push that I needed to switch to a completely plant based diet. I've been a vegetarian for over 3 years now, but this is taking it to a whole notha level! I got the Engine 2 Diet book after watching the film and have been cooking like a wild woman for the past 3 days! I'll be honest... it's been tough getting used to cooking this much. I don't think my stove has seen this much action since.... well, ever. My husband (who is the most supportive man on the planet) and I have been eating like Kings and I've been losing weight! Now I can definitely get used to this! For those of you that think going vegan means eating a bunch of carrot sticks (and believe me, I was one of them), I'm here to show you the light! Check out The Engine 2 Diet and see what you think! Here are some of the meals we have tried so far...
Breakfast Tacos with homemade salsa
Homemade Hummus Sandwich with sweet potato fries
Well, here goes nothing! After being inspired by my sister, I have decided to create a blog to organize my thoughts on all of the things I am passionate about. The title comes from using the right side of the brain.... the FUN side! This will be a place where I post ideas and images about everything I love: gardening, interior design, vegan cooking, photography, travel and even art lessons for kids! I hope you visit me often and I hope I inspire someone out there to scooch a little further to the right ; )
