This past week I watched the documentary, "Forks Over Knives," and it was the final push that I needed to switch to a completely plant based diet. I've been a vegetarian for over 3 years now, but this is taking it to a whole notha level! I got the Engine 2 Diet book after watching the film and have been cooking like a wild woman for the past 3 days! I'll be honest... it's been tough getting used to cooking this much. I don't think my stove has seen this much action since.... well, ever. My husband (who is the most supportive man on the planet) and I have been eating like Kings and I've been losing weight! Now I can definitely get used to this! For those of you that think going vegan means eating a bunch of carrot sticks (and believe me, I was one of them), I'm here to show you the light!
